Substituting non-Paleo favorites is always tricky, but Banana Pancakes are one of my favorite things to eat! You can also do this with a grated apple too. Enjoy and look forward to breakfast the Paleo way as much as I do!
Ingredients
Serves 1
- 1 banana, mashed
- 1 free-range egg
- 1 tsp of coconut, shredded
- 1 tsp cinnamon
- Vanilla Extract, dash (Optional)
Directions
2. For extra flavor, add coconut chips, vanilla extract (just a dash) and cinnamon.
3. Pour this mixture into a frying pan and cook as you would a regular pancake.
5. Enjoy!

I love these pancakes, I use 2 eggs, 1 banana and a tablespoon of coconut flour and cinnamon. They flip fine as long as you let them cook long enough when first pouring them in, they are SO delicious with plain yogurt on top! Obsessed!

I’d love to make this lower carb and keto friendly. That’s simply mean losing the banana. But, banana is the heart of this recipe. I can’t see it working with mushed berries instead. Any ideas??
I followed the recipe to the T and they fell apart (maybe because I blended the banana and the egg?) For the second pancake I added some coconut flower. Same problem. Every recipe I have tried for Paleo pancakes just doesn’t hold up. I ended up making porridge out of the ingredients, but it just wasn’t very good. I will stick with my homemade granola, salads and scrambled eggs for breakfast.
You need to use coconut flour (one Tbl ) instead of shredded, and 2 eggs
Wanted a recipe to use up over-ripe bananas and found this. Adapted it to my taste by substituting the coconut with a spoonful of hazelnut butter and three spoons of oat bran (to two bananas and two eggs). Made 16 very small pancakes – you need to make sure the heat isn’t too high to begin with and cook the first side thoroughly before flipping. They were light and delicious!

After more than a year of taking four 24-hour Nexium capsules every day with mediocre results, I decided to take matters into my own hands (or I should say, my own skillet). I bought and downloaded two ebooks discussing the benefits of eating the Paleo way, and decided to give it a try. The first thing I tried was the Banana Pancake recipe. Delish! And satisfying! This is day three for me, following paleo guidelines, and here’s what I’ve noticed: a dramatic reduction in stomach pain and irritation, no more bloating (I have a flat tummy again!), softer, formed stools, and amazing energy – even without caffeine! I keep thinking this is too good to be true, but I’m determined to continue this plan of healthy eating; I turn 50 in a few weeks, I my gift to myself is to be medicine and chemical

Definitely try to steer clear of supplements and OTC pills/remedies. It sounds like you are off to a great start with The Paleo Lifestyle. Keep up the good work!
I made this exactly as the recipe states and it was great! A couple of tips: beat the batter well before you put it on the heat. This will get air bubbles into it and make the pancakes fluffier, thicker, and easier to flip. Use medium-low heat, about 6 minutes each side. More coconut gives it a little more “al dente” if you like that. Make sure the pan is well oiled; I used olive oil.
I tried this and got scrabbled eggs with banana. Will try again with coconut flour or arrowroot (which I have seen in other paleo recepies so I guess it’s ok).
These are great! I added some arrowroot powder to thicken it and that helped keep them together. I know that that’s not paleo, but not sure what other options there are for this purpose. Have also wondered how one could add protein to this dish – any ideas?
Try double the eggs for every banana you use. (ie. if you want more pancakes and use 3 bananas, try 6 eggs). Boyfriend and I did it and it worked beautifully. 🙂

I tried this recipe for the first time today. I added 1 tablespoon of coconut flour, blueberries and walnuts. They were delicious. I don’t follow a Paleo diet but I’m definitely adding some of these recipes to my menu. The only thing I may try the next time is to make them smaller so they’re easier to turn. Absolutely delicious and no syrup necessary because the bananas are sweet enough.

I am new to Paleo and found this recipe. It is delicious. I used two bananas and added a half cup of almond flour to the recipe. From a suggestion above I made them very small so they would be easier to turn. Very filling too.

I realize that people can get carried away with the whole subject of whether something is truly paleo or not, but I find myself wondering about bananas. These days, at least, bananas cannot propagate without help from humans. The seeds were bred to be smaller to the point where they cannot self-propagate any longer, so I wonder if it is truly paleo (I am saying this somewhat tongue-in-cheek, btw 😉
I think you may be right. My doctor said that I shouldn’t eat bananas because their glycemic index is off the chart!

Honestly, I didn’t expect this to taste good but I loved it! I used coconut oil on the griddle. The coconut was a nice touch. This is my 3rd day of paleo and I am down 3 lbs. I know its water weight but I am still happy! Thanks for this yummy recipe!

Hi Alicia, you can use a wide, stainless steel spatula or invest in a pancake maker that cooks both sides evenly.
Make them smaller, that way they are much easier to flip, good luck

Wow, sounds like a great way to use fruit that is starting to get old/brown around the edges. I love fruit, but only seem to eat it in spirts, which always leaves some laying around. Thanks again,Earl
