Dr. Monte has an interest in food-borne diseases and food additive safety. Since his retirement as professor of food science from Arizona State University in 2004, he has continued his study of the food contaminant methanol and it’s requisite metabolite formaldehyde as potential etiologic agents for various autoimmune diseases.
