Looking for a light, sweet, and refreshing dessert to top off that savory Paleo meal you’ve just finished? Try Cantaloupe Stuffed with Blackberries and Pecans! This is an especially tasty treat at the end of summer when blackberries are in season and often abundant in the supermarkets, and if you’re lucky enough to live in the right region: fresh at the farmer’s market.
- 1 cantaloupe
- 1 c. blackberries
- 1/2 c. chopped pecans
- mint or spearmint leaves for garnish
1. Cut cantaloupe in half (use a serrated knife) and scoop out seeds
2. Fill each cavity with blackberries and pecans
3. Garnish with mint or spearmint leaves
